Serves 4
Wedge Salad Ingredients
- 1 head iceberg lettuce, cut into wedges
- 4 strips crispy cooked bacon, crumbled
- 2 hardboiled eggs, diced or grated
- 1/2 Cup Aleia’s Panko
- 1/2 Cup cherry tomatoes, chopped
- 1/4 Cup red onion, diced and then soaked in water & champagne vinegar
- 1 Tbsp lemon zest
- 2 Tbsp champagne vinegar
- 3 Tbsp fresh chives, sliced
- 3 Tbsp scallions, sliced on the bias
- 1 Cup Aleia’s Seasoned or Garlic Croutons
Ranch Dressing Ingredients
- 1/4 cup buttermilk
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tsp dried minced onion
- 2 tsp dried parsley flakes
- 1 tsp dried chives
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dried dill
- Pinch each of salt & fresh black pepper
Dressing Prep
- Add all ingredients to a jar and shake vigorously. Or, whisk them together in a small bowl.
- Refrigerate until ready to use
Crispy Lemon Panko Ingredients
- 1/2 Cup Aleia’s Panko
- 1 Tbsp salted butter
- 1 Tbsp lemon oil or olive oil
- 1 Tbsp lemon zest
Panko Prep
- Heat oil and butter in sauté pan over medium heat. Add Panko and stir frequently, until beginning to brown, 1-2 minutes
- Transfer to a small bowl
- Mix in lemon zest, set aside
Preparation
- Make the dressing, refrigerate
- Soak the red onions. Place the diced onions in a small bowl and add 1/4 Cup cold water plus 2 Tbsp of champagne or vinegar. Soak for at least 30 minutes and drain before using
- Make the lemon Panko, set aside
- Make your hardboiled eggs, can be made ahead
- Prepare the bacon, microwave, bake or sauté full strips, then chop
- Cut the lettuce. Remove any loose or damaged outer leaves from the head of the iceberg lettuce. Cut the head of lettuce into wedges and remove the stem.
- Clean the lettuce. Rinse the lettuce wedges under cold water to remove any dirt and debris. Pat dry with paper towels and store in the fridge until ready to use.
- Prep the toppings: Crumble the bacon, chop the eggs, dice the tomatoes
- Arrange the lettuce wedges on a plate or platter and drizzle with dressing. Top with all the toppings, sprinkle with crispy breadcrumbs and croutons. Top with fresh chives and scallions
Note
- Use your favorite store-bought ranch or blue cheese dressing.
- Add your favorite cheese.
- Toppings to add: Avocado, chickpeas, green peas, purple cabbage, cucumbers, olives, capers, anchovies.
- Try it with romaine or radicchio.
